It
is said that you can often judge the quality of the kitchen and its
cook by their kitchen cutlery. No cook is going to use cutlery that
is not sharp enough to really serve its purpose.
Traditionally, good quality cutlery was made from silver,
though steel was always used for more common, practical knives. Electroplated
Nickel Silver (EPNS) has been used as a cheaper kitchen cutlery substitute
since the nineteenth century.
Today most kitchen cutlery is made from stainless steel; this includes
the quality styles. Melchior is a nickel and copper alloy which has
served as an alternative material choice, though it can sometimes contain
manganese.
